Finally, science is getting its act together and giving us something useful.

After years of experiments (which all have very boring names and that will take far to long to read so we're not going to go into that), scientists say they have engineered a "jailbreaking" yeast that could lead to significant health benefits and more importantly decrease the after effects of drinking it the next day.

According to a release from the University of Illinois, scientists there have used a "genome knife" to engineer a strand of yeast used in the fermenting of wine, beer and other products that has everyone very excited over the benefits it could bring.

"Wine, for instance, contains the healthful component resveratrol" said Yong-Su Jin, one of the associates in the University. "With engineered yeast, we could increase the amount of resveratrol in a variety of wine by 10 times or more." Also possible thanks to the "genome knife" would be the identifying and recreating the specific flavours of a wine, and then being able to recreate it ad infinitum, making that delicious bottle of red go on and on and on.

The best part though is the new ability to clone one enzyme that carries out the fermentation but also causes the toxins that give you a hangover. This new enzyme would make wine smoother and less toxic, which means that you'll be significantly less worse for wear the morning after.
