As it turns out, Ian Beale has been hiding behind a tree for the last few weeks, cultivating facial hair that we're meant to believe is his own.
As stated in this here article, he's only been roaming the streets of inner city Landan, while sprouting a beard and licking his lips. No one's sure why he's opted to make himself homeless, apart from that hanging out with effluent swilling winos is a better option than lurking around Walford with his unnerving little brother.
We've not been given an actual transmission date for his return episode, but we've been led to believe it's in "a few weeks' time."
