It's the final leg of Gino D'Acampo's tour of Italy tonight as he heads to Bologna, widely regarded as Italy's gastronomic capital, but us common folk will know it as the home of 'Spag Bog'. Gino meets a chef who has been honing her bolognese sauce recipe for almost 30 years, and later on prepares his grandfather's take on tagliatelle alla bolognese and explores the local speciality of mortadella. Bologna is also known for its tortellini, so Gino decides to make his own version which includes ricotta cheese, hazelnuts, orange zest and chocolate chips, of all things. Sounds pretty rank but can't knock it until you try it and all that.
