To be fair, it's more Brad Pitt signing on Quentin Tarantino's next film that's the issue rather than just Tarantino himself.
Variety reports that Paramount is accommodating Brad Pitt's filming schedule for Once Upon A Time In Hollywood, which is due to begin filming in June, so as to ensure he'll be able to sure in the long-awaited World War Z sequel.
David Fincher is still locked in as director of the sequel, and now that he's got more time for pre-production, it'll hopefully lead to a better film by the end of it all. Pitt, of course, is a producer on the World War Z sequel, so it's no surprise that they're happy to push production back for him.

Filming was originally supposed to begin on the sequel in January of this year, but given how that hasn't happened yet, this isn't much of a surprise.
No release date has been set for the World War Z sequel.
